If you’ve ever watched the classic American comedy Meet The Fockers then you may remember Jack Byrnes drink of choice and excuse to go to the store when meeting the Fockers being the Tom Collins, and he heads to the store for some Tom Collins Mix. As a huge fan of cocktails I’ve always had a curiosity surrounding this drink but somehow only recently even remembered to look it up.
Seems it’s a super simple drink to make and the key ingredient is fresh lemon juice! May have been looking for interesting ways to use lemons just because our lemon tree is loving life so here it is!
Usually this drink has a Gin base but I’m not a Gin fan and it’s not as popular in the younger generations as other white spirits like Vodka and white rum so we decided to use the Vodka Collins variation (if you’re a gin lover simply substitute over vodka).
30ml Fresh Lemon Juice
15ml Simple Syrup (sugar syrup, follow this link https://www.diffordsguide.com/en-au/encyclopedia/486/cocktails/sugar-and-sugar-syrup
Fill high ball glass with ice
Mix ingredients in a shaker, shake and strain over ice.
Top with soda water and garnish with an orange slice and Tom’s your uncle Collins!
Refreshing on a nice summery day to share with friends and a great way to use excess lemons.
*tip we used a mason jar to keep our syrup in and as you don’t need much maybe try 1/4 parts for syrup mix.
